To toast pine nuts, place in a dry frying pan and cook over a moderate heat until starting to brown.
Salmon with crispy crumb topping

Ingredients
For the topping:
- 50g (2oz) Country Life British Spreadable
- 50g (2oz) fresh breadcrumbs
- 25g (1oz) toasted pine nuts, chopped
- 6 sun ripened British tomatoes, drained and chopped
- 25g (1oz) grated Parmesan
- 30ml (2tbsp) freshly chopped basil
- 4 x 175g (6oz) organic salmon fillets
Method
- Preheat the oven to 200ºC, 400ºF, gas mark 6. Place the Country Life spreadable in a small pan and gently melt.
- In a bowl, mix together the breadcrumbs, pine nuts, sun ripened tomatoes, parmesan and basil, season well and pour over the melted Country Life spreadable.
- Place the salmon fillets on a baking tray and press the crumb mixture on top of each fillet of fish. Roast in the oven for 10-15 minutes, until the topping is golden and the salmon is cooked through.
- Serve with new potatoes and roasted cherry vine tomatoes.
